Ingredients:
1 rutabaga
3 tbsp olive oil
salt & pepper to taste
1/2 tsp apple cider vinegar
chopped parsley
Directions:
preheat oven to 425 degrees
cut each root end off of the rutabaga and peel carefully
cut into bite sized pieces
toss with olive oil, salt, & pepper
transfer to baking sheet (preferably lined with parchment paper)
roast until golden and soft, approximately 40 minutes, flipping halfway through
toss with apple cider vinegar and chopped parsley once done
