Just Cook: Roasted Rutabaga


  • 1 rutabaga

  • 3 tbsp olive oil

  • salt & pepper to taste

  • 1/2 tsp apple cider vinegar

  • chopped parsley


  1. preheat oven to 425 degrees

  2. cut each root end off of the rutabaga and peel carefully

  3. cut into bite sized pieces

  4. toss with olive oil, salt, & pepper

  5. transfer to baking sheet (preferably lined with parchment paper)

  6. roast until golden and soft, approximately 40 minutes, flipping halfway through

  7. toss with apple cider vinegar and chopped parsley once done
